Kale seeds produce fine plants that have a constant supply of new leaves from the top. Large dark long leaves with white ribs. Kale is used to make the Tuscan dish "Ribollita".

Kale is a form of cabbage, with powerful anti-oxidant properties. It has naturally very high levels of beta carotene, vitamin C and lutein. Kale growing was encouraged in the World War "Dig for Victory" campaign.

A traditional Portuguese soup, Caldo Verde, contains pureed potatoes, diced kale, olive oil, broth, and often also sliced cooked spicy sausage.
